Lynn’s Delicious Everything but Egg Free Noodle Kugel

-8 oz of Quinoa pasta (Ancient Harvest is the brand, rotelle style noodles- I bought at QFC)
-2 cups almond milk
-8 oz container of Tofutti cream cheese
-4 organic eggs -1 tsp vanilla
-½ cup margarine
-2 organic apples sliced
-½ cup raisins
-¼ cup dried cherries
-¼ cup honey
-¼- 1/2 cup chopped walnuts
-1 tbsp. cinnamon
-1/8 tsp cloves
-2 tsps. sugar

Mix cream cheese and margarine in mixer and add eggs, milk, honey, cloves, 1 1/2 tsps cinnamon and vanilla. Mix until smooth. Add raisins, cherries and cooked noodles to mixture and stir with spoon until blended. Grease 9×13 inch pan and then pour in all ingredients. Layer apple slices on top. Sprinkle walnuts over mixture. Combine rest of cinnamon and sugar and sprinkle over the walnuts. Bake at 375 for 45 minutes. Let cool for 15 minutes. Enjoy!
